Classic Pumpkin Pie Recipe

🧂 Ingredients:
- 1⅓ cups all-purpose flour
- 1 tsp salt (divided)
- ⅓ cup vegetable oil
- 2 tbsp cold water
- 2 large eggs
- ½ cup sugar
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ⅛ tsp ground cloves
- 1 can (15 oz) pumpkin puree
- 1 can (12 oz) evaporated milk
- ¾ cup whipping cream
- 2 tbsp sugar (for whipped cream)
🔪 Instructions:
- Make the crust: Mix flour and ½ tsp salt. Add oil and stir until crumbly. Add cold water gradually until dough forms. Press into a 9-inch pie plate.
- Prepare the filling: In a large bowl, beat eggs. Add sugar, spices, pumpkin, and milk. Mix until smooth.
- Fill and bake: Place pie plate on oven rack. Pour in filling. Bake at 425°F (220°C) for 15 minutes. Reduce to 350°F (175°C) and bake for another 45 minutes or until a knife inserted in the center comes out clean.
- Cool: Let pie cool completely on a rack (about 2 hours).
- Whip the cream: Beat whipping cream and 2 tbsp sugar until stiff peaks form. Serve on top of cooled pie.
