I need Pumpkin…everything…Mmmmm PIE!!

Classic Pumpkin Pie Recipe

Servings: 8 Prep Time: 20 mins Bake Time: 1 hour Total Time: ~3 hours (including cooling)

🧂 Ingredients:

  • 1⅓ cups all-purpose flour
  • 1 tsp salt (divided)
  • ⅓ cup vegetable oil
  • 2 tbsp cold water
  • 2 large eggs
  • ½ cup sugar
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ⅛ tsp ground cloves
  • 1 can (15 oz) pumpkin puree
  • 1 can (12 oz) evaporated milk
  • ¾ cup whipping cream
  • 2 tbsp sugar (for whipped cream)

🔪 Instructions:

  1. Make the crust: Mix flour and ½ tsp salt. Add oil and stir until crumbly. Add cold water gradually until dough forms. Press into a 9-inch pie plate.
  2. Prepare the filling: In a large bowl, beat eggs. Add sugar, spices, pumpkin, and milk. Mix until smooth.
  3. Fill and bake: Place pie plate on oven rack. Pour in filling. Bake at 425°F (220°C) for 15 minutes. Reduce to 350°F (175°C) and bake for another 45 minutes or until a knife inserted in the center comes out clean.
  4. Cool: Let pie cool completely on a rack (about 2 hours).
  5. Whip the cream: Beat whipping cream and 2 tbsp sugar until stiff peaks form. Serve on top of cooled pie.
